This is actually an article I wrote for The New York Times. It outlines the process by which the Greeks invented this dish, and what the dish means to me.

It’s not that I don’t like what I consume, it’s just that I have no idea what I’m eating. So I always get stuck with whatever I grew up eating with my parents at home.

On the way to the festival, you’ll find that you’ll also be treated to a few delicious Greek street food items. Aisinos is a sweet and sour combination of sour (like ketchup) and sweet (like onions) that I find the perfect way to start a meal.
